A firm nutty-sweet cheese, Uplands' award-winning Pleasant Ridge Reserve Gruyere is a must-have for any after-dinner cheese course.
Uplands Cheese Company began making cheese in 2000, although Mike and Carol Gingrich and Dan and Jeanne Patenaude have owned the farm since 1994.
Uplands' handcrafted Pleasant Ridge Reserve Gruyere instills flavor and quality with its ancient methods of cheesemaking. It was developed using age-old techniques that originated in the alpine provinces of France.
Only non-pasteurized milk from the company's single herd of cows is used for Pleasant Ridge Reserve Gruyere to instill the naturally sweet flavors of pasture grass, clovers, herbs and wild flowers.
Uplands ages each wheel of Pleasant Ridge Reserve Gruyere, best served at room temperature, for four months in controlled temperature and humidity rooms to simulate the limestone caves in Southeastern France. The rind is washed and turned daily with a brine solution simulating the bacteria in the limestone caves.
This particular cheese received the 2003 United States Champion award at the US Championship Cheese contest, as well as the 2001 and 2005 Best of Show award at the American Cheese Society Conference. No other cheesemaker has achieved the honor of twice winning Best of Show at the American Cheese Society.
