Crave Brothers Farmstead Cheese produces specialty farmstead cheeses right on the farm in Waterloo, Wisconsin using only the freshest, high quality milk from Crave Brothers Dairy farm. The Crave brothers farm in harmony with the land to produce quality milk and award winning cheeses. The cows are fed homegrown, high quality forages. Crave Brothers Les Frères is a European style cheese developed with care to reflect the Crave Brothers' French-Irish heritage. Les Frères means, "the brothers" in French. It is similar to the French Reblochon and Saint Nectaire and the Irish Gubbeen cheese.

Les Frères is a semi-soft washed rind cheese with an earthy, fruity flavor. It is slightly pressed and has a creamy, softer than Brie texture with a nutty aftertaste. It is made from pasteurized cow's milk and has a light tan rind. The cheese is aged in an aging room on Crave Brothers Dairy farm. It comes in a 2.5 lb. random weight wheel.

The best age for enjoying a young version of Les Frères is at three weeks of age. The cheese is fully ripe at about eight to ten weeks. More aged versions of Les Frères are similar to an Alsatian Muenster.

Serve Les Frères with crusty bread or fruit and nuts. It is delicious paired with white wines such as Sauvignon Blanc or Riesling and makes a wonderful addition to a cheese course.

Les Frères recently placed first in the Semi-Soft cheese category at the World Dairy Expo Championship Dairy Product contest held in Madison, Wisconsin.
