Carr Valley Gran Canaria
A mixed milk (cow, sheep and goat) made from the milk of grass fed animals, aged for three years in olive oil. It has a deeply complex flavor and a wonderful crumbly texture that overpowered the judges at last year's prestigious American Cheese Society conference in Milwaukee: This cheese won Best of Show! The Carr Valley Cheese Factory continues a century-old family tradition. Sid Cook, the fourth generation family owner, was raised in the plant, made his first solo vat of cheese at age ten and got his cheesemaker's license at 16 to help out in the family business. Cook's enthusiasm for cheesemaking has led to the creation of national award-winning cheeses.
At present, Carr Valley produces almost 50 different cheeses, including many that no one else is making. Cook has experimented with new varieties of cheese for well over a decade, creating unique delights such as Cocoa Cardona, a cocoa-covered goat's milk cheese which earned best of class honors at the U.S. Championship Cheese Contest in Milwaukee, Wis. this year. At the American Cheese Society conference in July, his cheeses took 7 other firsts, besides Best of Show.
